Makansutra Cooking - Sambal Grilled Fish

Everyone loves grilled fish, especially sambal grilled fish. It's a Malaysian dish that brings out a mixture of rich flavours. We've chosen to use ikan selar (scad) but if you like, you can use a nice red snapper too. Wrap it in banana leaves, smother it with sambal spices and grill over slow fire.
