Imagine a balmy evening by the Marina Bay. The atmosphere..calm, breezy and relaxed. Twilight and the stunning skyline beckons, and suddenly, without warning, the flavour in the air is pierced by the arresting smells of some of Singapore’s favourite night time foods. The BBQ stingray (skate) with a bold sambal tempts, the distinct smell of satay on a charcoal grill distracts, the roasty skewers of char-grilled chicken wings cajoles and the fried oyster omelete pan is clanking as the chef flips the eggs and sweet potato flour mix over the succulent oysters.
